Simulación del efecto antibacteriano de compuestos fenólicos del nejayote
Resumen
Las enfermedades transmitidas por alimentos contaminados con bacterias patógenas representan una amenaza global para la salud pública. Las simulaciones proporcionan percepciones valiosas sobre la dinámica poblacional, interacciones y adaptaciones bacterianas, para tener herramientas sobre su control sin necesidad de experimentar o previo a aplicarlo a la realidad. Este estudio aborda la inhibición del crecimiento bacteriano mediante la simulación de procesos, centrándose en compuestos fenólicos derivados del nejayote, un residuo de la nixtamalización. Se emplearon patógenos alimentarios como Escherichia coli, Listeria monocytogenes y Salmonella typhimurium, destacando su prevalencia y las vías de contaminación en la cadena alimentaria. Se exploró el potencial antimicrobiano de los compuestos fenólicos, evidenciando su capacidad para inhibir el crecimiento bacteriano en proporción directa a su concentración. La investigación sugiere la viabilidad del nejayote como agente antimicrobiano, subrayando la importancia de investigar compuestos residuales para aplicaciones biotecnológicas. Estos hallazgos contribuyen a la comprensión de mecanismos subyacentes y abren la puerta a futuras investigaciones para optimizar la aplicación práctica de estos compuestos, consolidando su papel en la regulación del crecimiento bacteriano y promoviendo la seguridad alimentaria.
