Transición nutricional
Abstract
The Nutrition Transition refers to the changes that occur by increasing the income ranging of a family, community or population from a traditional diet to a modern, affluent, high-fat, sugars, processed foods and animal protein and low in fiber and complex carbohydrates; and changes in the pattern of physical activity, modifying from vigorous activities to sedentary activities.
Throughout history, man has undergone various changes in form and power in their daily work. However, in the early twentieth century these changes marked a new stage which resulted in the global population presenting high levels of obesity and physical inactivity but also nutritional deficiencies.
The challenge now is to reorient the ways of eating and physical activity to promote health improvements.
