Tendencias actuales en el consumo de alimentos funcionales en México: revisión crítica

Esta revisión crítica analiza las tendencias actuales en el consumo de alimentos funcionales en México mediante la integración estructurada de literatura científica reciente y reportes de mercado. La búsqueda se llevó a cabo en Web of Science, Scopus y PubMed, seleccionando artículos publicados entre 2015 y 2025 en revistas Q1–Q2, así como revisiones especializadas y documentos regulatorios. Se identificó que el mercado mexicano muestra un crecimiento sostenido, especialmente en productos con probióticos, prebióticos, antioxidantes y compuestos vegetales bioactivos; sin embargo, persisten vacíos significativos en regulación, alfabetización nutricional y métodos rigurosos para evaluar el comportamiento del consumidor. El análisis comparativo con tendencias globales revela una desarticulación entre evidencia científica, innovación tecnológica e información al consumidor. Finalmente, se proponen oportunidades estratégicas para fortalecer la investigación, regulación y desarrollo industrial del sector.
