The traditional method of cooking cochinita starts in the Piib (undergrown oven) that gives it marked flavors. Representative dish of the Mayan culture with a great meaning, it is prepared in guilds, village festivals and even family gatherings. The characteristics of the dish vary depending on the region where it is prepared as well as the ingredients.
