Use of biogas in sustainable gastronomy
Abstract
More than 80% of the world's energy requirement is based on the consumption of fossil fuels. The high dependence on polluting and extinguishable fossil resources has gradually increased the participation of alternative energies, which are a type of clean energy, that is, they exclude any type of pollution. Biogas is one of these, its production is a natural process, it is carried out by microorganisms as part of the biological cycle of organic matter, which involves the fermentation or digestion of organic materials or waste to obtain this type of fuel. Sustainable gastronomy implies practices such as waste and energy management, which are an important part of promoting sustainable development in the tourism and gastronomy sector.
