Consumption of insects and food security
Abstract
Anthropoentomophagy is the consumption of insects by man, insects are consumed in different parts of the world, their consumption is attributed to their nutritional content since they offer a high content of proteins and nutrients, however it should not be left out the implications for food safety that they offer since it is unquestionable that they present microorganisms such as fungi, viruses, bacteria, larvae and protozoa that can put the health of the populations that consume them at risk.
