What additives can be found in dairy products? And Are they needed?
Abstract
Dairy products are an important part of the usual diet, however, to improve sensory aspects, preservation and better stability, some additives are used. The objective of this bibliographic review is to identify the usefulness of the additives present in dairy products, and if these additives have any effect on human health. Therefore, it was found that the additives presented by these products were stabilizers, thickeners and gelling agents, emulsifiers, acidity regulators, preservatives and colorants. The presence of these additives is necessary, however, a high consumption of these products and in the long term could be related to negative effects on health, so consumption should be moderate.
