Valorization and use of barley (Hordeum vulgare) for brewing malts
Abstract
Specialty beer represents an emerging market in Mexico. It is currently necessary to innovate in the process and mainly in the "recipe" of a beer, to provide sensory attributes that satisfy the consumer. Therefore, this research paper focuses on the evaluation of different varieties of barley that allows to produce a craft beer. The varieties Esmeralda, Pastor Ortiz and Doña Josefa were obtained by a simple random sampling in the region of Apan, Hidalgo. Their malting quality and forced germination capacity were evaluated. The three varieties of barley showed acceptable results according to the Mexican official standards (NMX-FF-043-ICPs-2003), with values greater than 85% of minimum germination; Doña Josefa variety showed the highest percentages of germination (86-92%). Taking this into account, it was concluded that the Doña Josefa variety has the greatest viability to produce gourmet beer. From this barley various malts were made, which will be subsequently evaluated for brewing.
