Nutritional evaluation in different brands of turkey sausages.
Abstract
The Official Mexican Standard (NMX-F-065-1984) defines sausage as a semi-firm pasta stuffed food product of characteristic color, made with the meat mixture. Poultry-based sausages (chicken and turkey) have become the favorite of consumers in recent years, because of their better taste and because they are considered healthier. The objective was to evaluate the nutritional content and additives presented in the labeling of turkey sausages that are distributed in supermarkets in the city of Pachuca de Soto, Hidalgo.
A review of a total of 10 brands of turkey sausage was collected, gathering nutritional information (energy, lipids, protein and carbohydrates) as well as main ingredients, sodium and fiber according to 100 grams of the product, in order to make a comparison between the different brands. It was concluded that, for the most part, these products tend to be characterized by high sodium content, in addition to being able to provide a more economical product, companies tend to add certain ingredients, such as flours, that decrease their quality.
After valuing the different brands of turkey sausage, it can be said that all the brands analyzed comply with that established in NMX-F-065-1984 in terms of protein and fat. They are foods considered high in sodium and additives so consumption should be moderate.
