Chiles en nogada preparation with ingredients from San Andrés Calpan
Abstract
The chiles en nogada, is undoubtedly the emblematic preparation of Mexico, with its origin in the convents and a mixture of temporary ingredients alluding to the miscegenation lived throughout the national territory and especially the poblano region that has made this dish a tradition framed in the annual celebrations of San Andrés Calpan, where this traditional recipe is taken to its maximum culinary expression.
