Elaboration of a dish based on the milpa diet

Abstract

The milpa diet is a healthy pre-Hispanic dietary model, which has as its nutritional-cultural center the products obtained from the milpa agrosystem. The integration and combination of these products in the daily diet in addition to those adopted by the traditional Mexican cuisine, represents a healthy and sustainable way of eating, which enhances the culinary traditions of Mexico, as well as promoting local consumption of food from each region.  Among the foods provided by the polyculture of the milpa are corn, beans, squash as main elements, in addition to others such as quelites and beans, so we made a broad bean soup with nopales and crispy steamed quelites with cheese, which could include the characteristics of the milpa diet.
