Preparation of potato pastes

Abstract

The paste is considered one of the emblematic dishes of the state of Hidalgo, its history dates back to the arrival of Cornish miners to Real del Monte at the beginning of the 19th century who consumed the Cornish pasty; either to appease the appetite or for functionality, these have presented variations over the years thanks to the popularization and creativity in the various pastry houses, however, currently the traditional potato paste with meat continues to be a reflection of the heritage english cuisine.
